Well I have made this recipe everyday this week; I make it~it’s gone, make more~it’s gone, make some more~it’s gone; now my ingredients are gone! Well it’s super easy to make and great with coffee or tea so I will have everyone think I am slaving in the kitchen while they are doing something around the house that does not interest me in the slighest…like watch sports, make a path in the snow for the dog, work in the garage, clean out the garage (pretty much anything to do with the garage)…I could go on and on. I have not had a cupcake for sometime so I decided to make some this weekend~why not it’s the Holidays!! I love pistachio’s and chocolate so it seemed like a no brainer (just add a touch of our friend the crazy coconut) and presto we has a moist and tasty treat as well as guilt free. Enjoy!! Not sure which I like more the batter (it’s seriously addictive), or the final product~which if kept in the fridge becomes addicting as well; I wrap them individually and after a few days having one a day becomes a routine then you start to deplete your stock pile then the worry sets in because you have created this dependent cycle and you see them trickle away…STOP~that’s why just have the batter and problem solved!
