Holiday Bites

Well I have made this recipe everyday this week; I make it~it’s gone, make more~it’s gone, make some more~it’s gone; now my ingredients are gone! Well it’s super easy to make and great with coffee or tea so I will have everyone think I am slaving in the kitchen while they are doing something around the house that does not interest me in the slighest…like watch sports, make a path in the snow for the dog, work in the garage, clean out the garage (pretty much anything to do with the garage)…I could go on and on. So my take away message is this: pour wine, turn on the music, put your apron on (make sure to smudge something on it to look crazy busy and “in deep” and enjoy NOT being in the garage.  Enjoy!! Pistachio Coconut Cupcakes

I have not had a cupcake for sometime so I decided to make some this weekend~why not it’s the Holidays!! I love pistachio’s and chocolate so it seemed like a no brainer (just add a touch of our friend the crazy coconut) and presto we has a moist and tasty treat as well as guilt free.  Enjoy!! Ingredients: 2-1/2 cups pistachio flour 1/4 coconut flour 1/4 unsweetened coconut flakes 2 tsp baking powder 1/2 tsp baking soda 1/4 tsp xanthum gum 1/2 tsp celtic sea salt. 2 eggs~separated 1/4 cup melted ghee/butter (or for even more coconut flavor use coconut oil) 1 TBS vanilla powder/extract 3 TBS xylitol (I use a spice grinder to make a fine sugar) 3 TBS unsweetened coconut milk (full fat and organic if possible) Chocolate Frosting: 4 oz of organic cream cheese~room temperature 1/4 cup organic cacao powder (unsweetened) 3 TBS coconut milk (full fat) 1/4 xylitol~pulse in a spice grinder as well) pinch of fine sea salt Directions: Preheat your oven to 350 degrees Take your standard cupcake/muffin tin and line with paper or grease them very well.  In a medium bowl toss in your dry ingredients: flours, coconut flakes, powder, soda, salt, and xanthum gum; I use a Read More

Not sure which I like more the batter (it’s seriously addictive), or the final product~which if kept in the fridge becomes addicting as well; I wrap them individually and after a few days having one a day becomes a routine then you start to deplete your stock pile then the worry sets in because you have created this dependent cycle and you see them trickle away…STOP~that’s why just have the batter and problem solved!  A perfect marriage: chocolate chip cookie meets and courts the scone alas never ending bliss…unless you are the man scone~kie and you realize we sconer~girls are “high maintenance” from time to time (my hubby has another name for it…but I digress) ***This picture does not represent the puffiness of the puffs) Enjoy!!
