Almond Encrusted Boneless Pork Loin

I was at the store today and saw these beautiful boneless pork loins and because they were begging me to buy them ~ I did. 🙂  I was in the kitchen all day and the idea of making one more dish was going to get the better of me but I wanted them for dinner so I decided why go too complicated and I used my old breading standby.  I must say most breading (no pun intended!!) can be pretty bland, but I really like the seasoning here because it packs a good palate punch without going over board but if you want to go Goldie Hawn and go overboard with the seasoning then by all means knock yourself out!

  • 4 boneless center cut pork loin chops
  • 1 cup almond flour
  • 3/4 tsp black pepper
  • 1 tsp salt
  • 1/8 tsp cayenne pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Ghee


  1. Preheat oven to 325 degrees
  2. In a small bowl combine almond flour, cayenne pepper, onion powder, garlic powder, salt & pepper, pour out onto a plate or shallow wide bowl.
  3. Rinse and pat dry your pork chops and sprinkle both sides with salt and pepper.
  4. In a large skillet over medium heat add your ghee, oil, or lard and wait about 30 seconds to bring to temperature (you want your pan preheated so you can get a nice sear-something that cannot be achieved correctly in a cold pan).
  5. Meanwhile dredge your pork chops in your flour mixture and shake any excess off and lay in pan-careful not to overcrowd.
  6. Better to sear in batches then all at one time otherwise you will be steaming and not browning.
  7. Leave your chops alone for 5 minutes, flip and cook another 4 and transfer to a cooking rack set within/over a cookie sheet (if you do not have the rack do not worry but it does ensure a crispy coating on both sides).
  8. Place in oven to finish cooking and achieve temperature figure about 20 minutes depending on the thickness of your meat.
