Honestly I do miss Thai food, I was really digging the whole noodle~y peanut buttery, cilantro taste and then I went and fell in love with the Keto life style.  Well the muffin top that I could never get rid of melted away as soon as I gave up the trigger foods…noodles, sugar…starch; yep when they went bye-bye so did my waistline.  So to get back to the recipe at hand I still could have my Thai and eat it too (JK honey!) I omit the noodles and I am mindful of the amount of soy (I rarely cook with it and the coconut aminos is fine but I needed that flavor that only soy can provide (umami people) …make sure it is wheat free and organic however.  We can get a really nice meal that when you close your eyes you feel transported to the eastern world (well only if the world is eating Thai and under the signage “keto or bust”) 😉 Enjoy!!

  • 1 lb grass fed ground beef~the fattier the better
  • 1/2 cup crunchy organic peanut butter (I use almond because I could not find a peanut butter w/o added sugar)
  • 2 tsp minced organic ginger (fresh or jar if on hand)
  • 2-3 Tbs organic tamari soy sauce (or coconut aminos)
  • 3 organic shallots~thinly sliced
  • 2 Tbs of coconut oil with a splash of sesame oil
  • 9 oz organic broccoli slaw
  • 2 tsp siracha
  • a splash (to taste) organic coconut vinegar
  • fresh chopped organic cilantro for toping


  1. Heat your fat of choice over medium high heat in a large skillet; brown your meat and drain (tear) the excess fat and transfer beef to a bowl. Lower heat to medium and add your broccoli slaw, cook a few minutes to soften then transfer to bowl with beef. Combine the remaining ingredients to your beef/slaw mixture and toss together until thoroughly combined. I sprinkle extra cilantro for serving; a slice of lime works nice too.
