Blossom Bread

So this would be a good example of wanting to have a go to snack that contains NO sugar   No guilt here!!! But that being said I still treat it as an indulgence.  This recipe is nice because it is not offensive (even my very picky husband gives a thumbs up) it reminds me more of a spicy~bite of cake so it satisfies on a few levels.  So whip up a batch on the weekend and individually wrap and keep in the fridge for a healthy treat during the week and enjoy!!

Blossom Bread

Ingredients

  • 1/2 cup blossom butter*
  • 2 large eggs
  • 1 tsp vanilla
  • 1 TBS cinnamon
  • pinch of salt
  • Stevia (I use a dopper of vanilla cream and one of regular)
  • 1 tsp baking soda
  • 2 TBS yucon syrup

Instructions

  1. Preheat oven to 325 degrees
  2. In a medium bowl add your butter, and two eggs and whip using an electric mixer until light and creamy. 
  3. Add the remaining ingredients and blend until incorporated. 
  4. Pour into a prepared 8″x 8″ cake pan (I use coconut spray)
  5. Bake for about 20 minutes (a toothpick should come out clean when inserted into the center). 
  6. Cool before slicing.
