Cabbage Salad with Avocado Dressing

Please tell me I am not the only one that keeps cabbage in the fridge at all times?  So assuming you do (along with all the other veggies) this recipe is a cinch to assemble and keep on hand.  It gets better the longer it sits too, which is nice because it makes a lot and if you were in my household you would realize that “yuck” is not a term of endearment so you will be eating it for a while ????  That’s the downside of being the only keto-adapted individual roaming the halls of my home…but you get used to it!  Enjoy my fellow happy~healthy~ketoids!!!

Cabbage Salad with Avocado Dressing

  • 1/2 head organic purple cabbage~shredded
  • 1/2 head organic green cabbage~shredded
  • 1/4 cup organic red bell pepper~thinly sliced
  • 1/4 cup organic red radish~thinly sliced
  • 1/2 large organic shallot~thinly sliced
  • 1-1/4 cup keto mayo
  • 1 organic haas avocado
  • 1/2 cup white balsamic vinegar
  • S & P


  1. Take a big bowl and toss all the shredded veggies and set aside. 
  2. Meanwhile toss in a blender or food processor your mayo, avocado and white balsamic vinegar and process on low until incorporated and smooth. 
  3. Pour over your salad and mix well; season with salt and pepper to taste and finish off with a fresh splash of vinegar…easy and tasty!
