I will stress it again…if I can make into a cake I will and let there be light!  It was Marie Anoinette that said “let them eat cake” so as I see it to eat cake is law (actually she never really said that but that is a conversation I will have at another time~anytime, I am a super freak about French history…)  So have your cake-Enjoy!!!

Ingredients

  • 1-1/2 cups of steamed cauliflower
  • 1/2 cups of almond flour + 1/4 cup for coating
  • 1/3 cup freshly grated parmesan cheese
  • 3/4 cheddar cheese
  • Salt and pepper to taste
  • 1/2 oil for frying (lard, almond, ghee etc.)

Instructions

  1. In a medium saucepan over medium heat add steamed cauliflower and cook stirring continuously until all moisture has evaporated, remove and let cool. 
  2. In a medium bowl add all your ingredients and let rest while you preheat your pan. 
  3. Over medium high heat preheat your skillet before you add your oil, meanwhile shape your mixture into cakes (patties) roll in almond mixture. 
  4. Add oil to pan and bring to temperature followed by your patties; I will add a knob of butter to the pan for extra flavor but be careful and watch your temperature because it will burn.  Be mindful not to over crowd your pan and give your skillet a quick shake once your patties have been in oil for about 20 seconds to ensure they are not sticking. 
  5. Cook about 3 1/2-4 minutes per side being careful not to burn (you might have to adjust your heat to medium during cooking). 
  6. Transfer cakes to a wire rack over a cookie sheet and sprinkle with salt to taste and keep warm in oven (about 175-200 degrees) until serving.
