Cheesy~Spinach Chicken

My husband wants to like  spinach but he struggles, he’s a spinach connoisseur want~to~be and he even likes this chicken.  The recipe is so delicious that you could even omit the chicken~did I just say that??? omit the main ingredient…yes, you can and use the spinach mushroom mixture as a dip~trust me here- we have serious flavors going on and it is so easy.  So grab your ingredients and let the cooking begin.  Enjoy!!

  • 2 whole organic chicken breasts~split and quartered and pounded
  • 2 cups nut flour (I use hazelnut)
  • S&P
  • 1 tsp onion powder
  • 8 tbs organic butter (divided)
  • duck fat
  • 16 oz organic cremini mushrooms~wiped clean and sliced
  • 1/3 cup organic red onion~small chop
  • 1/2 cup white wine
  • 1 tbs organic garlic~minced
  • 1 cup cooked spinach (you could use baby)
  • 4 oz organic cream cheese~soften and stirred so it will not clump
  • 1/4 cup freshly grated parmesan cheese
  • 8 oz organic (grass fed)mozzarella~freshly shredded.


  1. Preheat oven to 350 degrees
  2. Season both sides of your chicken liberally with salt, pepper and onion powder; dredge through your nut flour.  
  3. Melt a couple of TBS of butter in each pan along with a drip or two of duck fat and bring to medium high heat.  *I use two electric skillets to make this go a bit faster but if you do not have two just work in batches until you have browned your chicken on both sides (be mindful to adjust the temp as needed so the nut flour does not burn). 
  4. Place on a cookie sheet (preferably with a wire rack to keep the bottom from getting soggy) or baking dish and cook for about 15 minutes. 
  5. While your chicken is cooking take a large skillet over medium high heat add your butter and a bit more duck fat; let that melt then toss in your mushrooms (a sprinkle of S & P) and let them get nice and brown (about 10 minutes and don’t forget to stir every so often). 
  6. Add in your onion and let them get happy~figure 5-8 minutes; finally add in your garlic and cook about a minute then pour in your wine and let cook down just a bit to burn off most of the alcohol. 
  7. Incorporate the cream cheese followed by the spinach….last but not least mix in your parmesan cheese. 
  8. Turn your broiler on and position your rack to 1/3 of the way from the top. 
  9. Take care and spoon the spinach mixture over each piece of chicken and top of with your mozzarella and broil until golden bubbly…so good.
