Chicken Broccoli & Cheese Casserole

If you are looking for a dish that will satisfy even the carbers/ or grainers in your family this is the one.  This is really a simple and fast dish; I always have cauli~mash in my freezer and I will prep all the ingredients the night before so I can easily throw everything  together and have a meal in no time.   I use my cauliflower mash in place of the more traditional rice in this recipe and I have to admit it feels good when I have hit with the whole family…winner winner chicken dinner!!! It has everything in it but if you are looking for a side perhaps some cheddar biscuits or a side salad would work. Enjoy!!

Chicken Broccoli & Cheese Casserole

  • 1 whole chicken roasted (or to save time I will pre-order a rotisserie chicken of my choice)-shredded
  • Cauliflower mash prepared (about 2 cups)
  • 1-1/2 cup homemade chicken stock / or store bought organic
  • 2 cups broccoli florets
  • 1/4 cup organic sour cream
  • 1/4 parmesan cheese-freshly grated
  • 6 oz Havarti dill cheese-small cubes
  • 5-6 green scallions-sliced
  • 2 roma tomatoes-seeded and diced
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 2 cloves garlic-minced
  • 2 TBS extra virgin olive oil


  1. Over medium heat sauté garlic and 2 TBS of the green onion in olive oil. 
  2. Add remaining ingredients (holding back 2 TBS of parmesan cheese and 1/2 of the Havarti dill, green onions as well) stir to combine and bring to a boil. 
  3. Turn heat to low and simmer until liquid is just about all absorbed while stirring occasionally. 
  4. Meanwhile turn on oven and set to broil; remove pan from heat and top with remaining parmesan cheese and sprinkle the top with the Havarti dill and broil about 5 minutes or until golden bubbly. 
  5. Remove from oven and add your reserved green scallions.
