Chicken bites


These could not be easier and yet they are so good.  This recipe proves you do not need complicated to get a great meal and perhaps even get complemented if the stars are in alignment!!  Really you can do this in a snap and makes a great healthy alternative to any chicken you can “pick up” on the way home.  This is always a fun one to do with the kids Enjoy!!

  • 2 full chicken breasts (we use pastured raised)
  • 1/2 cup cashew flour
  • 1/2 cup almond flour
  • celtic sea salt
  • fresh cracked pepper
  • oil of your choice


  1. Preheat oven to 300 degrees
  2. I cut the breasts down the middle so I end up with 4 halves; I then cut into bite size pieces. 
  3. Sprinkle with a generous amount of salt and loads of fresh cracked black pepper (I like to see the pepper in my coating). 
  4. Combine flours in a bowl (or even easier pour right on top of chicken) add chicken and toss to coat. 
  5. In a medium sized skillet add your oil (enough to cover the bottom of pan generously) and bring up to temperature. 
  6. Working in batches add chicken and let cook for 4 minutes and turn to cook other side for about the same amount of time (we are not looking to fully cook chicken at this point~just getting them a nice golden brown). 
  7. As they are getting brown pull out of skillet and place on a wire rack set over a cookie sheet. 
  8. When all of your chicken is browned place in oven for about 15 minutes. 
  9. Serve as is or with your favorite dipping sauce.
