Chorizo Breakfast Stew

I never thought of myself as an egg~stalker.  I mean I want to love eggs, I want to understand them, I want to eat them and feel like the “in” crowd because most people love eggs cooked one way or another.  But after 40+ years I can honestly say I found a way~I can be part of the greater masses it’s true and I thought if I found a way to enjoy such a nutritious perfect food I would have to share.  So now without further self aggrandizing…enjoy!!

Chorizo Breakfast Stew

  • Chorizo mixture:
  • 1 lb. of good quality organic chorizo (I try to stay away from too much filler: sugar etc)
  • 1 large organic yellow onion
  • S & P
  • A tab bit of organic ghee
  • Stew:
  • 2 grass fed eggs per serving
  • a splash of cream/milk/heavy whipping
  • 1/4 c shredded aged white cheddar
  • 2-3 TBs. homemade salsa  or organic store bought


  1. Take your big beautiful yellow onion and chop into a big dice (think rustic). 
  2. Over medium high heat add your “tad” bit of ghee and saute the onion until it has a nice color on it~10 minutes~ish. 
  3. Add chorizo to the pan and cook it through while you break up the mixture; if you get a bit of searing/caramelizing that would be extra fun
  4. After your mixture has cooked through you can let cool and freeze into portions for your families needs.  I yielded 4 servings for just me. 
  5. When you are ready to make the stew the work is essentially done (not to mentioned most of the dishes) 
  6. It is so simple and basically up to you how much cheese and or mixture (even salsa) you want.  But I will take a small pan and place it over medium heat, add my chorizo mixture and bring it up to temperature (if using directly from the fridge) ***you will not need oil of any kind from your pan because you will have enough from the meat mixture. 
  7. Meanwhile crack your two eggs into a bowl and whisk in cream and S&P to your liking. 
  8. At this point add your eggs to your pan along with the chorizo; stirring occasionally until the eggs begin to set, I then add the cheese and continue stirring the stew until all incorporated. 
  9. Turn off heat and plate.  I finish this dish with a good amount of  salsa.
