Cocoa Brownies~Cakey & Moist

Brownies are my favorite treat and because I look to incorporate healthy fat in my diet these tasty bites help to achieve this and I pretty much eat them whenever…breakfast is just as good as a mid day snack.  These guys are more “cake~like” but that is how I get my husband to eat them…can you imagine manipulating brownies in order for someone to like them??? doesn’t seem natural (even bad brownies are good…)~but I married him and I am the captain of “Team Fred”  so cake it is ???? But honestly they are super moist and not heavy at all…almost too easy to have around Enjoy!!

  • 1/2 cup organic almond butter (or any kind of nut butter you like)
  • 2 TBS organic cream cheese
  • 2 TBS organic butter of some sort
  • 1-1/2 TBS cocoa butter~melted
  • 1-1/2 TBS coconut oil
  • 1/4 cup unsweetened organic coconut milk (I open the can and scoop from the top so it’s the fat on top of the milk as well)
  • 1/3 cup vanilla whey
  • 2 eggs
  • 1 tsp vanilla~I use a powdered form
  • 1/4 cup unsweetened cocoa powder
  • 3/4 tsp baking powder~aluminum free
  • 1/4 tsp fine celtic sea salt
  • 1/2 cup xylitol
  • 1 tsp organic cinnamon
  • 1 tsp lau han extract
  • 1/3 cup nuts~optional


  1. Preheat oven to 350 degrees
  2. Prepare a 8″ x 8″ baking pan with butter/spray
  3. In a medium bowl add the cream cheese, butter and coconut oil; microwave for about 30 seconds to soften.  
  4. Next add nut butter, xylitol, vanilla, eggs, lau han, melted cocoa butter, and coconut fat/milk mixture to your bowl, mix with an electric mixer until well incorporated. 
  5. Then add the dry ingredients: cocoa powder, vanilla whey, baking powder, cinnamon and salt; incorporate into the wet mixture. 
  6. Finally fold in any nuts you may want. 
  7. Pour into baking pan and cook for about 18-1/2 minutes or until a toothpick when inserted comes out “just” clean  (we do not want to over bake because the brownies will be very crumbly. 
  8. Let cool and enjoy.
