I seem to be posting quite a bit of sweet treats lately…tis the season (ho~ho~ho!!) But if you were sitting there thinking to yourself…”if she would stop patting herself on the back…chili, crabcakes and her cauli puree;and just post some coconut chocolate truffles…my life would be to set…” then this is the post for you.  So…

I was sipping some wine and listening to some Christmas music over the weekend and I made these as a treat to nibble on during this festive time of year The colder they are the better…so keep them in the fridge and they will stay super good.  I used xylitol as my sweetener~this has a bit of a “cooling effect” so I would not go as far to say they are minty (because my husband said they were not…) but they are minty ???? so even a bigger plus during the holiday season.   I rolled my truffles in unsweetened coconut flakes…but use anything that you like: cinnamon, crushed nuts(always a hit ???? ) the list is never ending.  Enjoy!!

Coconut Chocolate Truffles

  • 1 cup melted fat~ I used both coconut oil and cacao butter
  • 1/3 cup unsweetened cacao powder
  • 2 TBS unsweetened coconut flakes
  • pinch of salt
  • 1 tsp vanilla
  • a spoonful of prepared coffee
  • a spoonful of coconut flavored rum (maybe because I was sipping wine…it sounded good)
  • 3/4 heavy whipping cream
  • Garnish to role your little turds (wink~wink Aunt Colleen and Measers)  in


  1. In a medium bowl whisk all the ingredients together (just make sure your fat is melted), let sit in the fridge…and stir it about every 15 minutes until your mixture can be scooped using two spoons and placed on a parchment line cookie sheet. 
  2. Stick back in the fridge for about a half an hour then roll the chocolate into bite sizes balls “truffles” then roll in your favorite topping. yum!
