Eggplant Italian Bake

This dish really has become a good substitute, I mean the idea of not eating pasta really upset me-but cooler heads prevailed and now I do not miss it (at all might be stretching it a bit but thinking about all the metabolic damage pasta does it really is a no brainer).  I never loved eggplant but I would eat it and now that I work with it more I understand that once you peel eggplant it almost becomes a different species-good for me So please know that I really think this recipes is a great Italian comfort food that is the healthy step sister of baked pasta. Eggplant Italian Bake

Ingredients

  • 1 organic eggplant-peeled and diced
  • 1/2 of a large organic onion-diced
  • 1 bulb of garlic-minced
  • 5 TBS organic grassfed ghee
  • 1 jar of organic crushed tomatoes
  • 2 TBS organic tomato paste
  • 1 can of organic Italian stewed tomatoes-drained
  • 1 TBS fresh oregano
  • 1/8 cup fresh parsley
  • 4-5 basil leaves
  • a splash of garlic powder
  • a bit of onion powder
  • a hint of cayenne pepper
  • S & P to taste
  • Lots of freshly grated parmesan cheese
  • Mozzarella cheese to top it off and be perfect

Instructions

  1. In a good size fry pan melt the ghee and add eggplant.
  2. Cook over medium high heat until the eggplant  begins to release its water content.
  3. Add the onion and cook together for about 10-15 minutes over medium heat.  The two will look like a goobery mess but that is what we want. 
  4. Finally add the garlic and turn the mixture down to low stirring occasionally. 
  5. In a food processor add the drained stewed tomatoes and put a good chop on them- I like texture in my sauce but I do not want huge chucks of tomato. 
  6. Combine all the ingredients (but not the cheese) together and let them get all merry with each other. 
  7. I take a oven safe casserole dish and prepare it with a good wipe of butter~ I then add the pot of greatness and then top with my cheeses. 
  8. Bake for about 1/2 hour on 350 (covered) remove the foil and kick up the heat to create your masterpiece of bubbly~cheesy~perfection!
