Gluten & Grain Free Pancakes

This recipe was created so I could surprise my husband one morning with pancakes while he was on day 15 of his LEAP rotation diet.  Up to this point he accepted the fact that pork this and pork that accompanied by zucchini this or zucchini that was his lot in life.  So I wanted to take what he could eat and create a nice welcome addition to his dining ritual~and I wanted something great and not just “good”.  I wanted him to enjoy these pancakes and ask for them again even when his diet is less restricted.  So without further blah…blah…blah. Enjoy!!

Gluten & Grain Free Pancakes

  • 1-1/4 cup almond flour
  • 1/2 potato starch
  • 2 tsp baking powder (1 part starch, 2 parts cream of tater from grape)
  • 1/2 tsp salt
  • 1/4cup organic apple butter
  • 1/4 cup organic white grape juice
  • 2 TBS almond oil
  • 1/3 cup almond milk (you may need more to thin out your batter the longer it sits)


  1. Whisk dry ingredients into medium bowl; set aside. 
  2. In small bowl add wet ingredients and fully incorporate then stir into dry ingredients. 
  3. Let batter sit a few minutes to rest while you prepare your pan.  
  4. Preheat a medium skillet (or use your griddle) over medium heat, add oil and a ladle of batter and use back of spoon to help spread out. 
  5. Cook until you see bubbles at the edge of your pancake start to set (about 1-1/2 minutes depending on the size of your pancake), flip and cook on other side about 1 minute. 
  6. Keep pancakes on wire rack set over a cookie sheet in oven set to 150 degrees until ready to serve.  ***let cool and individually wrap and put in freezer for a later time***
  7. * I served these with a homemade strawberry sauce (sliced strawberries with 2 TBS of white grape juice and let simmer.  Use a potato masher and smash strawberries as much as possible; put into a sieve and using a rubber spatula push strawberry mixture through holes while scrapping the other side)
