Green Olive Dip

I was first introduced to this dip many years ago from my sister in law De De (“Hi De De!!”) it was one of the first times I ate a dip with cream cheese (I hated cream cheese!!!) but with the saltiness of the olives and the crunch of the nuts it was delicious…the crackers helped I think as well.  Now many years later I have come to love cream cheese…although not by itself …yet!  I serve this with fresh crunchy green beans, jicama or celery…but do what you want and remember to dip with a smile ???? Enjoy!!

Green Olive Dip

Ingredients

  • 8 oz. organic cream cheese~room temp
  • 1/3 cup mayo
  • 5 oz jar organic green olives (I use the ones stuffed with red pepper)~chopped
  • 1/2 cup chopped nuts (I use pecans)
  • 1 tsp fresh squeezed lemon juice
  • 1 tsp of reserved olive juice (if you like it a bit more salty)

Instructions

  1. Combine all the ingredients in a bowl and refrigerate for at least an hour to let the flavors get happy…then dip away!
