Homemade Chai Tea

To have  homemade chai tea and I am not talking about the pre-mixed stuff (you should no me better then that ) is such a “calgon take me away” moment.  The creamy~richness with the perfect balance of warm spice-well I know of no better treat.  This tea is not suppose to taste like pumpkin pie, rather the spice is very subtle and non offensive.   This tastes like a day at the spa~when you just feel so relaxed and then they bring you a cup of this…ah!!!! Homemade Chai Tea
Save Recipe


  • 3 cups water
  • 1-1/2 TBS of fresh ginger
  • 7 cardamom pods~crushed
  • 1 tsp tsp cinnamon
  • 6 pcs of star anise
  • 1/4 tsp whole black peppercorn
  • 2 pinches of fresh nutmeg
  • 3 whole cloves
  • 1 half of a vanilla pod that has been saved from a previous recipe
  • 1-1/2 cup cream
  • 8 tsp of darjeerling tea
  • Sweetener as desired


  1. In a small saucepan over medium high heat place ginger that have been peeled and sliced, cardamom, cloves, nutmeg, cinnamon, vanilla pod, star anise and black peppercorns and bring to a gentle boil. 
  2. Turn heat down to a simmer and add tea and let steep for 5 minutes. 
  3. Add cream and stir to combine. 
  4. Pour mixture through a strainer and return to pan. 
  5. Over very low heat whisk mixture until it becomes somewhat frothy and pour into a teacup. 
  6. You can add a star anise or cinnamon stick for a complete experience!
