Jalapeno Bites

This picture I must admit does not do the little jalapeno justice…I mean I did not honor in any way my delicious fiery snack one bit.  So I digress- this is about food not photography (who am I trying to kid here…seriously we eat with our eyes) I was lazy and took a bad and rushed picture These really are so good and would be even better it I wrapped them in bacon but again the underlying theme here is that I was being lazy..so sad.  So please take the effort to make these the next time you have a spicy mix of peeps and you will not be disappointed~Enjoy!!

  • 6 large and beautiful organic jalapenos…ladies bigger is better here
  • 1/2 lb of pasture raised pork~yum!!
  • 1 TBS ancho chili powder (I use even more)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/4 tsp oregano
  • S&P to taste
  • 1/3 cup shredded pepperjack cheese


  1. I usually save myself some time by browning up some beef or pork and freezing it in 1/2# containers for use at a later time so if you do that this dish is even easier. 
  2. If not brown up your pork (I did these once with ground buffalo and they were so amazing) drain the excess grease and then combine all your ingredients in a bowl. 
  3. Preheat the the to 375 degrees and grab your cookie sheet. 
  4. I cut my jalapenos by holding them up by the stem and then  cutting down the length  (1/4 or 1/3 of the pepper) this leaves me a good little vessel to fill~think canoe.  I tend to overstuff but that seems to be par for the course. 
  5. At this point if you want to wrap bacon (use half pieces and secure with toothpick if necessary). 
  6. Place on baking sheet and as always sprinkle with more shreeded cheese. 
  7. Cook at 375 dregrees for about 10-15 minutes or until done and they are bubbly and oozy good!  Serve with homemade salsa or sour cream.
