Keto Chicken Salad

Not that chicken salad is complicated-far from it really; it’s what you like so you can’t go wrong.  It rewarding to know with simple ingredients you can have a delicious light meal within minutes or go all out and get complex with multiple layers of flavor and that works too.  I say keto here because chicken salad is easy with store bought mayo and adding a dash of sugar in some way shape or form and some even make it more of a meal by adding pasta…yep that used to be me so no judgment here: you are safe!  I use my basic keto mayo (that I added a bit of organic Dijon mustard) and some white balsamic vinegar to give it tang and a hint of sweetness and that’s basically the dressing-oh and as my husband would say “don’t forget the salt and pepper” and that’s where we leave it and I get the Fred thumbs up…again it feels good to be a winner…even if it only takes S&P to do it ????  I remember years ago I said I would never “ever” eat chicken salad and now here I am 40+ years wiser and having it for breakfast…life is so funny.  Enjoy!!

Ingredients

  • 3 organic chicken breast (halves)
  • 3 stalks of organic celery hearts-chopped with their leaves as well
  • 2 organic radishes-small dice
  • 1/2 cup organic onion-small dice
  • 2 tbs fresh chopped organic parsley
  • 1/4 cup chopped raw organic walnuts
  • 1/2 keto mayo
  • 3 tsp white balsamic vinegar
  • celtic sea salt
  • fresh cracked black pepper
  • sliced jicama

Instructions

  1. Preheat oven to 350 degrees
  2. rinse and pat dry your chicken breasts; season with salt and pepper. 
  3. Place in an oven safe dish (add a bit of water or chicken stock to steam the chicken in) cover with aluminum foil and bake for about 30-35 minutes or until cooked through. 
  4. Meanwhile chop all the ingredients and toss in a bowl along with the mayo and vinegar; stir to combine; when the chicken is cool enough to handle-chop or shred or what ever you want and combine with all the ingredients and let sit a bit in the fridge to let the flavors come together. 
  5. Taste for seasoning and adjust accordingly. 
  6. I slice jicama and grab some bibb lettuce to serve this with…no bread here.
