LEAP~ Quinoa Cakes

Okay~okay I know that this recipe has grain but it’s not for me, but they just looked so good I had to share My husband is so restricted as to what he can eat that I give him kudos for still smiling when he sees quinoa, almond and zucchini “ah~la anything” because that is all he has been eating going on day 8; but needless to say he is getting an “A” for effort and he defiantly is getting an “A” in the no wine-ing department (all pun intended!!!)  Any who – this recipe can be adapted so many different ways but who knows maybe you or someone you know just happens to be on day 8 of a almond, quinoa and zucchini diet…and if you make this you are an instant hero! Enjoy

LEAP~ Quinoa Cakes

Ingredients

  • 1/3 cup cooked quinoa
  • 1/3 grated zucchini (squeezed dry)
  • 1/2 cup almond flour
  • 1/4 cup almond oil
  • salt & pepper to taste

Instructions

  1. This is embarrassingly easy but here we go: add all ingredients into a bowl and mix; form into patties. 
  2. Over a medium high heat add oil to small skillet and heat oil before dropping patties into pan.  I shake the pan after about 30seconds just to make sure there is no sticking.  After 2 minutes I flip and shake again. 
  3. Cook second side about 2 minutes as well being careful not to burn. 
  4. I keep mine warm on a oven rack set over a cookie sheet in the oven at about 175-200 degrees until I am ready to serve.  They freeze well too, just individually wrap in aluminum foil and to reheat just make sure they are defrosted and put in preheated 350 degree oven for about 5 minutes.  Enjoy you LEAPster!!!
