Matcha Chip Ice Cream

Not a great picture (maybe I will do it better later) anyway I love ice cream and because I try to get about 70% of my calories from fat I eat this for breakfast and basically all throughout the day.  Today I had chocolate for breakfast and I plan on my vanilla before bed   There is no sugar so no insulin spike~ just fat, fat and more fat…it should go without saying that the texture is like nothing else and because the rest of the ingredients are such good quality (free of micro toxins, organic non gmo etc) I feel great all day.  I make mine with xylitol but if you have a sensitive digestive system you may want to try a different sweetener.  This is my absolute favorite combination and if you have never tried green tea matcha it has such a nice veggie/green..pure (at least I think so) flavor coupled with the bitterness of the chocolate makes for a great partnership.  Enjoy!!

  • 4 whole eggs (preferably from a chicken that did not consume grain or soy…just grass and bugs!!)
  • 5 egg yolks
  • 1/2 cup cacao butter~melted
  • 7 ish TBS grass fed butter
  • 3 TBS MCT Oil
  • 2-1/2 tsp of vanilla (from the vanilla bean, not whole just the seeds, or powder)
  • 1/2 tsp apple cider vinegar
  • 1/4 cup  xylitol
  • 1 TBP organic raw honey
  • 2 tsp matcha powder
  • 3 oz of cocoa nibs (unsweetened) or chopped from an organic chocolate bar 90% or greater cocoa.
  • 7 TBS water


  1. I usually add all my ingredients (except the chocolate) to my vitamix (I do crack my eggs in a separate bowl to make sure there are no shells in the mixture) with the exception of the cocoa butter and xylitol; I usually combine these two in a microwave safe dish and heat them on high at 30 sec intervals~stirring in between.  This allows the xylitol to somewhat get dissolved (it will not completely dissolve) and the cocoa butter to melt down as well. 
  2. Once the two are combined I add the water so it cools the mixture slightly and does not begin to scramble the eggs when added to the blender. 
  3. Mix on high for a couple of minutes to make sure all the ingredients are fully incorporated.  
  4. Add mixture to your ice cream maker and let spin for about 1/2 hour then add the chocolate and let go another 10. 
  5. Empty contents to your freezer containers and freeze for about an hour to get firmer ice cream. 
  6. Best ice cream ever!!! ***Remember this ice cream contains RAW eggs*** and DO NOT feed to your pets…they cannot have xylitol!!
