Recipe for Coconut Chocolate Treats

I follow a ketogenic diet so therefore I eat a lot of healthy fat~alot!!  Now I love coconut and as we know coconut has plenty of healthy MCT’s that our bodies love and use for fuel Occasionally I want something that is just a quick bite and these fat bombs are just the perfect treat.

  • 1/3 cup organic coconut oil
  • 1/3 cup coconut spread
  • 1/3 cup vanilla whey protein powder (I use Jay Robb)
  • 1/3 cup organic unsweetened coconut flakes~large
  • 1/3 cup organic unsweetened coconut flakes~small
  • 1/4 tsp vanilla (I used vanilla powder/seeds)
  • 1 TBS + 1 Tsp Xylitol
  • 1/8 tsp salt
  • 1/4 organic cream cheese (this is optional but a great addition)
  • 1-1/2 cup unsweetened chocolate chips.
  • 1/4 cup chopped raw walnuts, or any nut you like


  1. First line a mini muffin tin with paper liners. 
  2. The fastest and easiest way to make this recipe is to melt chocolate chips in 30 second intervals using a microwave safe dish (stirring in between to incorporate-we do not want to burn the chocolate just melt)
  3. When it looks like the chocolate is about 90% melted just stir until the remaining incorporates. 
  4. You can make your own chocolate which I prefer but I wanted something truly quick to make. 
  5. Next combine the coconut oil, cream cheese (if using) and coconut spread in a bowl and heat it up about 25 seconds; remove and stir to combine. 
  6. Next add your remaining ingredients and throughly combine and set aside. 
  7. Spoon melted chocolate into paper liners (I prefer 1/3 way up) If adding nuts pop pieces in the center of the chocolate then top off with coconut mixture. 
  8. Set in the fridge until the bombs harden (30 minutes) or in your freezing cold garage for 1…just kidding.
