Pizza~Pick Up Style

Pizza is and will forever be one of my all time favorites and it is hard to believe that you can leave the old world pizza behind.  Think about the countless hours and skill people have put fourth in developing the best pizza crust~because let’s be honest it’s all about the crust.  Well us non-glutonians strive for the same thing and that is crust perfection.  This crust is and has been my go to and I have been quite satisfied but I have since come up with a more “chewy” crust that I enjoy just as much, so this crust is pick-up style and I hope you enjoy!!

Pizza~Pick Up Style

  • 1/4 cup golden flax flour
  • 1/4 cup almond flour
  • 1/3 cup freshly grated parmesan
  • 1 tsp italian seasoning
  • 1/2 tsp onion powder
  • 1 tsp salt
  • fresh cracked pepper to taste
  • 1 egg
  • 1 tbs olive oil/almond oil/melted butter or any oil you choose
  • 2 tbs H2o
  • 3 cloves garlic roasted
  • 1 clove garlic raw
  • Cheese-any combination and I use 2- cups of freshly grated mozzarella and Monterrey Jack
  • Veggies-pre cook them as necessary to your liking


  1. Preheat oven to 375 degrees
  2. You will need a cookie sheet, parchment paper and olive oil cooking spray; I get these ready so they are ready to go once I mix all my ingredients together. 
  3. In a medium bowl combine dry ingredients; incorporate your egg, oil and water. 
  4. Mix in smashed roasted garlic and set aside for a few minutes to rest. 
  5. Spray parchment paper with oil and transfer your dough to sheet and spread out to a shape and thickness you desire (I work into a rectangle about 8″ x 12″ ) just remember your cooking time will vary depending on your thickness but you can eyeball it in the oven and you will know when it is ready because you will be hungry and your crust will be golden brown. 
  6. Take out off oven and turn it up to 425 degrees.  
  7. I cut the raw garlic on a biased  and “run” the cut sides down all over the surface and edges of the crust~this gives it that extra garlic-y touch. 
  8. Add your favorite toppings (I use a sugar free pizza sauce) and I will use mozzarella, and a Monterey Jack combo and I always sprinkle extra parmesan and salt right before I put into the oven. 
  9. Bake for about 8 minutes or until golden bubbly!!
