Pumpkin Seeds

Ok, so here is my addiction…the sweet, simple, non judgmental, perfect holiday seed.  I know the carb content is high so rather than eating what I am embarrassed to say was XXX amount when I could get my hands on them.  I now eat 1 (wait I cannot lie) 2 seeds a night (lying again) ok I keep it to a handful…way too much carbs but I am seeing my neurofeed back specialist so we might have to deal with this at that time.  So easy to do and so good for the soul…enjoy!!

Ingredients

  • 1 local farm raised pumpkin
  • 1/4 cup organic grass fed ghee
  • 2 TBS celtic salt

Instructions

  1. Preheat oven to 350 degrees..and get ready for greatness!!
  2. I scoop out and separate the seeds from their tangled orange goober of a mess (that would be a tip of the cap to Heather and Blake~non related to this recipe)
  3. Anyway then I dry the seeds on a kitchen towel swishing them around every so often (changing to a drier towel helps to speed up the process).  
  4. Now that the hard part is over I take my biggest rimmed cookie sheet and spread them out tossing in the ghee (that I slightly melted in the microwave) with the salt. 
  5. Coat all the little wonders in their buttery blanket of goodness and the put them in the oven. 
  6. I check and toss them about every 7 minutes until that moment of perfection…oh you will know (but figure about 20 minutes depending how dark you want them). 
  7. At this point you are on your own and nibble accordingly
