Roasted Cauliflower

This is one of those recipes where technique is the main ingredient.  Don’t get me wrong, I never underestimate the power of simplicity and food preparation is no exception.  But a high heat is essential for this dish to go from just “OK” to really a welcomed side dish; even from those who are not trying to avoid certain foods and do not realize they are eating something delicious without all the added “stuff” like seasoning packets that can contain any number of additives~yuck! So make something simple and Enjoy!!

Roasted Cauliflower

Ingredients

  • 1 head of organic cauliflower
  • celtic sea salt
  • fresh cracked pepper
  • 1/3 cup goat butter

Instructions

  1. Set your oven to 400 degrees
  2. Wash and dry your cauliflower and chop up into small florets (it’s nice to have some flat sides so the cauliflower can have more caramelization)
  3. Sprinkle with salt and pepper~I like a medium coarse grind here, it really looks nice and rustic. 
  4. Meanwhile melt your butter in a small saucepan and then drizzle over cauliflower. 
  5. Toss all together and pour out onto a large cookie sheet and bake in the oven for about 25 minutes making sure to toss cauliflower half way through your cooking time.
  6. **This side dish is great the next night if you put any leftovers into a small saucepan, add a little goat butter and using a potato masher smash until you have a nice consistency.
