Smothered Cube Steak

Simply good comfort food to enjoy with not much fuss….I used cube steak but any beef would work well.  Your could swap the beef stock with chicken and serve it with poultry….many choices and all will be great   Enjoy!!

  • 2 medium organic onions~sliced thinly (just over two cups)
  • 2 Tbs duck fat
  • 1 Tsp organic Worcestershire sauce
  • 2 tsp organic tomato paste
  • 1 cup homemade beef stock
  • 1/4 tsp onion powder
  • pinch of cayenne
  • 2 tsp freshly grated parmesan cheese
  • 1 tsp stone ground organic mustard
  • 1/4 tsp xanthum gum
  • 6 grass fed cube steaks


  1. Take a small soup pot or skillet (either works) and melt the duck fat and toss in your sliced onions. 
  2. Saute for about 10 minutes over medium heat until onions have softened up a bit; add the tomato paste and Worcestershire sauce, with a bit of salt and pepper-give it a stir and let cook for a minute then add the remaining ingredients. 
  3. Pour over cube steak and either: bake in a 350 degree oven for 30 minutes (covered), or cook top in a large skillet simmering away until the meat is done to your liking. 
  4. Let cool a few minutes~the sauce with thicken slightly.
