Spicy Pork Salad

This salad is not just a boring concoction of sad veggies that have been thrown together haphazardly-oh no sister, this is a super awesome combination of crunch, flavor and so very filling that dare I say it…”it’s a circus in my mouth” kind of salad.  And yes that is a quote taken from a trip my husband had up north golfing with the guys (hmm..) so leaves me to ponder…anyway it’s so good who needs dressing Enjoy!!

Ingredients

  • 1 romaine heart cut in half (lengthwise)
  • handful of compari tomatos~chopped
  • 1/3 c sweet vadalia onion~sliced
  • peppers: red & yellow I like the mini ones you can find now in a bag
  • 1 pork tenderloin
  • 1/3 c. shredded sharp chedder or whatever cheese you like…pepperjack would be great
  • a big spoonful of ghee
  • Cajun seasoning to taste
  • S&P

Instructions

  1. This is just simply putting everything together and eating right away, you really do not want this salad to sit because it will wilt. I heat up the grill on high.
  2. Take the tenderloin and remove the silver muscle then rub it down with ghee, cajun seasoning and S&P.
  3. Throw it on the grill and forget about it for a few.
  4. Meanwhile if I am using the small peppers I just cut them crosswise and toss them in a frying pan with some ghee, next toss in the onions and let them sit a bit over high heat to let them get some color fast. I like my veggies crunchy so I cook them long enough to get some good color and soften ever so slightly but this is optional and do what you like.
  5. Turn your tenderloin to cook on the other side after about 5-6 minutes and cook an additional 5-6mins.
  6. I then turn down the heat a bit (to medium) and continue grilling until cooked through (usually about 10-15 minutes more).
  7. Make sure to have halved your romaine heart and slice it up.
  8. Finally remove the tenderloin (I like to let it rest about 10-15 before I slice) and slice on a diagonal and toss with all other ingredients-make sure to use the ghee right along with everything else, toss and now you have a great salad. The juices and ghee create their own dressing that along with the cajun spices rocks!!
