Spotted Peanut Butter Cookies

Well I made these many times before I turned my dietary lifestyle around for the better.  I adapted these cookies to  my criteria and not thinking anyone would like them in my family that do not restrict themselves…they gobbled them up I have to say they are really good and if my arm hurts from patting myself on the back…I guess we will all have to deal with it ???? I keep these in the fridge and they will last about a week.  Enjoy!!

  • 1 Cup smooth organic peanut butter
  • 1 cup xylitol/erythritol
  • 1 tsp baking soda (aluminum free)
  • 1 extra large egg
  • chocolate chips~find the kind that is right for your diet style-they are out there


  1. Preheat oven to 350 degrees
  2. Mix all ingredients into a bowl and scoop and put on a cookie sheet. 
  3. I criss cross the top just like the cookies of yesteryear (dip fork in hot water between crossing and your fork will not stick to the cookie dough as much). 
  4. Baking these cookies will vary depending on the size of your cookie and if you like them crispier but figure about 12-15 minutes. 
  5. I let the cookies cool and rather than stirring the chips into the batter I melt them in the microwave in 20 second increments until smooth, I add a touch of butter (stir to incorporate) then I drizzle over the top of the cookie. 
  6. I think in the recipe I used 90% chocolate and added a TBS of xylitol*  I keep these wrapped individually in the fridge, or put into freezer bags so I have something on hand
