Maybe I am a tomato freak because these simple dishes are just so flavorful…bang on! Cherry tomatoes or which ever ones you find that you like are a taste of the good ole hot~lazy summer days!!! Bright and zippy~replace the green beans tonight and you will have happy taste buds around the dinner table Enjoy!!

Stewed Tomatoes & Feta

  • 2 cups organic cherry red tomatoes~sliced in half
  • 2 cups organic cherry yellow tomatoes~sliced in half
  • 1/4 cup chicken bone broth
  • 1/2 cup organic feta~crumbled
  • 1/8 cup fresh chopped organic parsley
  • Salt & Pepper
  • 2 TBS organic extra virgin olive oil
  • 2 cloves organic garlic~minced


  1. This recipe is fast and easy:
  2. Using your largest skillet-add your olive oil and bring up to heat over a medium high temp; toss in your garlic ~ being careful not to burn it (about a minute). 
  3. Toss in your sliced tomatoes and let cook about a minute or two; add in the bone broth along with salt and pepper; let cook about a minute than reduce your heat to a gentle simmer. 
  4. Add the feta (reserving about a tablespoon or two), stir and remove from heat. 
  5. Let cool and finish off with the remaining feta and chopped parsley.
