Sweet & Sour Cucumber Chips

Today I was craving vinegar…yep I am hoping I am not the only one but that was what I was craving…well that and chocolate~seriously!   So I woke up and made brownies for the third time this week and while they were baking in the oven…the mini cucumbers were crying for a swim in some aged white balsamic heaven So I made these…always good: crisp, clean and super tasty.  Enjoy!!

Sweet & Sour Cucumber Chips

  • 3 mini organic cucumbers
  • 1 small organic shallot
  • 1/4 cup organic white balsamic vinegar
  • 1 tsp lau han extract
  • pinch of fine celtic sea salt
  • pinch of organic dill weed


  1. If you have a mandolin this recipes is super fast but if not no worries just slice the shallot and cucumbers as thin as you can (or like). 
  2. Transfer to a bowl and add the rest of ingredients; you can add more or less of what you like; I tend to stay away from adding “more” sweetness where I can so you may want a touch more. 
  3. The longer this sits the better 🙂
