  • 5 chicken thighs~diced very small
  • 1 15 oz can organic coconut milk~use about 3/4 of the can
  • 2 cups homemade chicken bone broth
  • 1/3 cup organic shallot~minced
  • 1-1/2 tbs fresh chopped organic garlic
  • organic ginger~peeled and sliced (I use about 4 slices)
  • Lemongrass~1 (4) inch piece bruised with the back of your knife
  • 5 compari tomatoes~peeled and seeded
  • 4 large organic button mushrooms~wiped clean & thinly sliced
  • 2 tbs chili paste
  • 1 tbs fish sauce (I use a brand that does not contain sugar)
  • juice and a few peels of an organic lime
  • 2 tsp~xylitol
  • 1 tbs~fresh chopped organic cilantro


  1. Prep your tomatoes by bringing a small pot of water to a gentle boil. 
  2. Carefully criss- cross a slice on the bottom of each tomato and drop in the water for about 30 seconds remove and drop into cold water and remove the skin off each tomato by peeling back with a pairing knife from the slices at the bottom of tomato. 
  3. Remove the seeds~ chop up and set aside. 
  4. In a soup pan over medium high heat scoop out the coconut fat and toss it in the pot. 
  5. When the bubbles somewhat subside toss in: shallot, garlic, ginger, chili paste and lemongrass give it a good stir and let it cook for about 8-10 minutes. 
  6. Add in your bone broth, coconut milk and fish sauce; bring up to a gentle boil; add in your chicken, stir and cook about 1 minutes then reduce the heat to a simmer. 
  7. After about 10 minutes add in your mushrooms, tomatoes, xylitol, juice from half the lime and the lime peels; give it a good stir and taste…if needed add reserved coconut milk or lime juice to suit you. 
  8. Once simmered and chicken cooked through (which should take no time at all since the pieces are so small) discard the lemongrass, ginger and lime peel. 
  9. Serve with fresh chopped cilantro…and enjoy your effort!!
