Veggie~Beef Soup

This recipe goes back many years, it’s my mom’s and its the BEST I did have to make some minor changes –sorry mom-but I have to do what I needs to do ????anyway I omitted the pasta and I leave out the potatoes and Wha~La greatness!  Just note that with perfection comes patience and so plan that this recipe needs two days to be the amazing creation that it is…just say’n ????

Ingredients

  • 2-1/2 lbs. grass fed beef (chuck roast) cut into rustic size chunks (about 2-1/2 inches)
  • Beef bones *about 1-1/2 lbs.)
  • 1 to 1-1/2 cups yellow onion~diced
  • head of cabbage
  • 1 to 1-1/2 lbs green beans*
  • 1 cup celery~cut
  • 2 carrots~sliced (if using.  I use for flavor but I prefer not to eat them)*
  • 2 15 oz cans organic italian stewed tomatoes
  • 1 large 28 oz can organic whole tomatoes
  • 1 small can of organic tomato sauce
  • S & P to taste
  • *my mom uses canned green beans and canned carrots because she thinks the soup is less sweet this way (just make sure to drain the veggies before you add to soup) but if you prefer fresh you can steam them ahead of time before you add them to the soup.  I just prefer to throw it all in together and have a veggie hot tub party

Instructions

  1. The day before in a slow cooker add beef bones, diced onion and cut up beef to pot; pour in enough water to just cover the mixture. 
  2. Cover and cook on low for about 4-6 hours. 
  3. Let cool and keep in refrigerator overnight, in the morning skim off fat and remove the bones and put the remaining beef, onion broth  mixture in a heavy cast iron dutch oven over medium high heat. 
  4. In a food processor, pulse the stewed and whole tomatoes a few times to break them down; add to pot. 
  5. If using a small head of cabbage I slice about 3/4 of the head (if the head of cabbage is really big then I shred about half). 
  6. Add to soup pot followed by all the other veggies, bring to a boil and then cover and reduce heat to low and gently simmer for about 4 hours (until the carrots and green beans are soft)
  7. Add salt and pepper to taste.
