Zucchini With Cheddar

Listen closely….do you hear the sounds of satisfaction coming?  Because this dish is just that “perfecto” baby I am a back seat fan of zucchini…or not so fast; this dish changed my vision and now I am riding shot gun!! And all it took was an open mind.  Serve this dish with anything…Enjoy!!

Zucchini With Cheddar

  • 1 organic zucchini
  • 1/2 freshly grated cheddar (I use goat cheddar)
  • 2 organic green scallion onions
  • celtic sea salt
  • freshly cracked black pepper
  • 1 TBS raw butter (I used goat butter in this recipe)
  • Oil of your choice to sauté


  1. Using a box grater; grate your zucchini and when finished “wring” out in a dish towel to remove any excessive moisture. 
  2. In a small/medium skillet add your oil and bring oil to temperature; add zucchini followed by salt and pepper. 
  3. Let cook over medium-medium high heat to get a little color (approx. 5 minutes) ; add green onion and let go about a minute. 
  4. Finish up by adding your butter and cheese, let sauté for about 1 minute and turn off heat and serve
