Recipe for Egg Wrap

Breakfast Egg Wrap

I guess my attempt to be still long enough to take a decent photo is beyond my reach…I will be better about it~so take these pics with a grain of salt!  Ok, again eating real and unprocessed food is so simple that to actually think these are recipes sounds ludicrous-more like assemblies 🙂 and that pretty much sums it up.  I have been making these every morning, cutting them up into bite size portions and wa~la…I am out the door and just like countless others eating their GMO laden “egg” sandwiches on the way into work…look over and I might be driving right next to you feeling a bit less guilty eating on the run 😉 Make these and feel great~Enjoy!!

Ingredients:

  • 1 pastured raised beautiful little egg
  • 1 Tbs freshly shredded organic cheese~I use pepper jack for a kick!
  • 1 coconut wrap
  • A bit of butter to sear the wrap before serving
  • 1-2 tbs of an organic red pepper, yellow pepper, mushroom, fresh parsley, onion mixture that I make on the weekend (just dice/chop all up and saute in some of your favorite fat…I used duck.  Pop in a container for all week)
  • Splash of cream

Directions:

Grab a small pan and scoop your veggie mixture in (now if you sauté them in enough fat you will not need to add anything to the pan, the fat in the veggies should be enough)…see I am going to make this very easy so no excuses 😉 In a small bowl whisk your cutie~pa-tutie egg along with a dash of cream and a bit of salt and pepper love, add to your now heated veggies and top off with your cheese.  Now recently I discovered I like my eggs just a bit underdone and I think that lends itself nicely here because ….it just does!!! JK, it helps bind everything together and not make the poor cheese do all the work!  When it is just about done turn off the heat and lay your coconut wrap over the mixture..we need to heat this baby up so it will be more easy to work with…again easy~peas-y.  Remove the wrap and scoop of your mixture and spread it across the bottom half of the wrap, fold over and roll (let rest seem side down), wipe out your pan and add your butter (I forgot to mention to turn the heat back on and get hot enough to quickly brown the wrap)…now gently add the wrap to the pan and press down just a bit, gently roll over and do the same on the other side.  When brown enough to your liking remove to the cutting board…let sit a moment to cool and than dig in or slice it up.  So good…and I am sure this seemed like more work then its worth BUT YOU WOULD BE MISTAKEN…super easy and should take no longer than 5 minutes-think about it…back in the day it would take longer than that to go through a drive through!!!  And if all of this is still too much…have your partner do it for you 😉  Cheers!!
