Recipe for Zucchini Bake

Zucchini Bake

Ok to be honest…the walnut flour ~because it is darker in nature makes this dish look like the stuffing you had in years past…which actually is not a bad thing but you could use a lighter cashew flour if the darker color does not appeal to you.  Now, that being said this is such a great tasting side that all your peeps will enjoy it no matter what they eat 🙂 Enjoy!!

Ingredients:

  • 2 medium size organic green zuchinni~shredded and squeezed super dry
  • 3/4 cup organic onion~diced
  • 3/4 cup walnut flour
  • 2 oz organic cream cheese~room temperature
  • 1/2 freshly grated organic parmesan cheese
  • 2 eggs
  • 2 cups pepper jack cheese
  • S&P

Directions:

preheat oven to 350 degrees

Prepare  an oven safe baking dish  (sprayed or rubbed down with your favorite fat).  In a medium bowl add all your ingredients and pour/scrap into your baking vessel…dap a few drops of butter and bake for about 35 minutes…until nice a golden brown.  I let it sit about 15 minutes to rest before I slice it up 🙂
